Recipe: Steamed Layered Cake (Lapis Kanji)

Lapis Kanji (Pepe) or in English you can call it Steamed Layered Cake, it’s match with the the theme Layered of Weekly Photo Challenge :).

This is one of my favourite Indonesian tradional cake, I always enjoy this cake by eating it layer by layer, it just so fun to eat it that way, especially when using the real pandan taste (not artificial/essence).
This time i’m using chocolate essence just to make it quick and simple, because i’m too lazy to get the pandan essence from scratch 😀

 

Bahan/Ingredients:
300 gr tepung kanji (Tapioca flour)
150 gr tepung terigu (wheat flour/all purpose flour)
400 gr gula pasir (granulated sugar)
1200 ml santan (coconut milk, medium thick)
sejumput garam (pinch of salt)
essence coklat atau pewarna makanan sesuai selera (chocolate essence or food coloring)

Cara membuat:
1. panaskan kukusan
2. campur tepung kanji, tepung terigu, gula pasir, garam
3. tuang santan sedikit demi sedikit, aduk hingga tercampur rata menggunakan whisk
4. bagi dua adonan (atau tergantung banyak warna yang diinginkan), beri warna/essence.
5. siapkan loyang yang sudah dioles minyak tipis-tipis, tuang selapis demi selapis secara bergantian, tiap lapis dikukus selama sekitar 5 menit, untuk lapisan paling atas (terakhir) kukus lebih lama sekitar 15 menit.
6. Angkat, dinginkan, potong setelah kue dingin

Directions :
1. heat up the steamer
2. mixed the tapioca, wheat flour, sugar, and salt together in a bowl
3. pour the coconut milk slowly, mixed them together until the sugar dissolved using whisk
4. divide the batter, add the chocolate essence into one of the batter (or any color you desired)
5. spread oil thinly to the prepared pan, pour the batter layered each color every 5 min, for the last layer add about 15 minute extra time.
6. take out and let it cool

Tips :
1. pakaikan serbet di tutup kukusan agar tidak ada air menetes ke kue.
2. gunakan ukuran yang sama untuk setiap lapis adonan agar lapisannya rapi.
3. setelah dingin, potong dengan benang agar rapi hasilnya.

1. use clean fabric to cover the lid of the steamer, so that no water drops into the cake.
2. use the same size cup to get perfect layer.
3. use thread to cut the cake (after it cool) to get perfect cut.

*iseng-iseng resepnya di translate seadanya pake bahasa inggris sekalian ikutan WPC :D.
